Dinner Catering

 

Following are sample menus.  We are also able to custom-design menus.

Please call 667-2202 and ask for the catering manager to discuss your needs.  The catering manager's hours are Monday-Friday 9am-3pm.

We are able to accommodate most special diets.

Groups smaller than 20 may be surcharged.

We do require notice.  The amount of notice required will vary depending on the size of your group and how many clients are already booked for the day of your event.


We also provide service as required.  Generally, this requires a 2 week advance notice.  Please discuss this with our catering manager.

MEAL SELECTIONS

$28/personChicken Marbella
A Chocolate Claim standard.  This is a robust preparation of chicken marinated in capers, olives, herbs & white wine.  It is served over pilafed rice.  A simple green salad and fresh bread & butter complete the meal.

The traditional moussaka without the meat.  A rich tomato mushroom sauce scented with cinnamon, layered with baked eggplant and finished with a bechamel/parmesan sauce.  Served with a Greek style green salad & fresh bread & butter.

Spinach & Herb Cannelloni                                                                          
Fresh pasta wrapped around leaf spinach and a combination of fresh herbs then baked in a flavourful tomato sauce and bechamel sauce.  Served with fresh bread & butter and a green salad.


Beef Bourgignon                                                                                                                       $45/person
The traditional French beef and red wine stew finished with sauteed mushrooms and herbs.  This is excellent with roasted garlic mashed potatoes.  Choose any 2 of the vegetables listed below.  Served with fresh bread and butter.

Rich and flavourful and bursting with scallops, shrimp and halibut.  This is a real treat meal.  It needs only the fruity green salad and fresh bread we serve with it.  We recommend that you complete it with a bottle of crisp white wine.


Traditional Spanish Paella                                                                                                        $45/person

Short grain saffron rice, chorizo sausage, chicken thighs, artichokesand roasted peppers cooked in chicken broth, fresh herbs and a splash of wine.  This needs only a crisp spinach & cucumber salad and fresh bread

and butter to complete it.   



Braised Lamb Shanks                                                                                                                $55/person

Lamb shanks braised in red wine, mirepoix of vegetables, olives and tomatoes.  Served with roasted garlic mashed potatoes, braised leeks, green salad and fresh bread & butter.


Roast Loin of Pork with Orange Marmalade                                                                                $50/person

Loin of pork roasted on a bed of fennel, onion, oranges & pears and finished with an orange marmalade.  Served with roasted garlic mashed potatoes, roasted vegetables, apple turnip puree and fresh bread and butter.

A rich and flavourful chicken preparation taken from the South Indian tradition.  This is served over a pilafed rice and accompanied by the traditional yogourt "salad" called raita (yogourt, cucumber, tomato, mint & cumin) and with a fruit chutney.  This dinner is completed with a green salad and vinaigrette.

A traditional Middle Eastern lamb stew flavoured with ginger, cinnamon & saffron and finished with almonds & apricots.  This meal would be best accompanied by Middle Eastern cous cous, tomatoes under caramelized onions and the roasted vegetables from our list.The meal is rounded out with a green salad and our fresh bread with butter.

We slow cook our prime rib to tender & juicy perfection and flavour it with fresh herbs & garlic. We recommend it with horseradish smashed potatoes. You may choose two vegetable selections from the list below. We include a simple green salad with vinaigrette, fresh bread & butter.  Available to groups of 15 or more.

Tenderloin of beef with Stilton Sauce                                                                                        $60/person

The tenderest cut of beef roasted to medium rare (or your specifications) and served with a wonderful creamy sauce.  Choose smashed or roasted potatoes and 2 vegetables from the lsit below.

Beautiful Taku River sockeye salmon filets are baked just so in this creamy citrus sauce which highlights the flavour of the salmon. It contains fresh orange and lime juice, cream, honey & fresh tarragon. It is served with pilafed rice. Choose two vegetable selections from the list below. We will include a green salad with vinaigrette, rolls fresh bread & butter.

Roast turkey with apple pecan stuffing or beer braised ham with a ginger chutney glaze. We serve this dinner with the appropriate gravy, roasted garlic mashed potatoes, roasted veggies, a yam gratin, green salad with vinaigrette & fresh bread & butter.

A good roasting cut of either bison or elk served with a juniper & garlic flavoured sauce.Accompanied by roasted garlic smashed potatoes, 2 vegetable selections, a green salad and fresh bread and butter.

We usually need a minimum of 2 weeks notice to ensure a supply of bison.

Minimum 15 people and 2 hours of service required.


VEGETABLE SIDES

Roasted beets tossed in balsamic vinaigrette


Seasonal roasted veggies - typically a mix of peppers, mushrooms, onion, green beans or asparagus, beets 

    and whatever we can find that roasts well.


Yam gratin - a savoury yam pudding topped with crisp breadcrumbs


Tomatoes roasted under caramelized onions


Turnip and apple puree


Spinach gratin - spinach creamed with onion and topped with gruyere cheese


STARCHES

Rice pilaf - usually cooked in chicken stock with herbs and finely diced veggies


Roasted garlic mashed potatoes


Roasted potatoes - must be consumed almost immediately

CHILDREN 8 AND UNDER ARE CHARGED AT 50% OF THE MEAL PRICE.

DELIVERY IS CHARGED FOR ALL ORDERS UNDER $500 AND FOR DESTINATIONS OUT OF THE IMMEDIATE DOWNTOWN AREA.
