Meal Selections

A Chocolate Claim standard. This is a robust preparation of
chicken marinated in capers, olives, herbs & white wine. It
is served over pilafed rice. A simple green salad and fresh bread
& butter complete the meal.

The
traditional moussaka without the meat. A rich tomato mushroom
sauce scented with cinnamon, layered with baked eggplant and finished
with a bechamel/parmesan sauce. Served with a Greek style green salad & fresh bread & butter.

Creamy,
rich risotto pairs beautifully with the shellfish. The colours
are stunning and the flavours delicious. Served with a simple
green salad with vinaigrette and grilled vegetables this makes a
simple but satisfying meal. Subject to availability of seafood.

A perfectly cooked breast of chicken sauced with a reduction of white wine
& chicken stock flavoured with fesh tarragon. We recommend a rice pilaf with this dish. Choose two
of the vegetable dishes listed at the end of the menu. We also serve a
green salad with vinaigrette & bread rolls or sliced baguette with
butter.

A
traditional Middle Eastern lamb stew flavoured with ginger, cinnamon
& saffron and finished with almonds & apricots. This meal
would be best accompanied by Middle Eastern cous cous, tomatoes
under caramelized onions and another vegetable dish from our list.The
meal is rounded out with a green salad and our fresh bread with butter.

We slow cook our prime rib to tender & juicy perfection and flavour
it with fresh herbs & garlic. We recommend it with horseradish
smashed potatoes. You may choose two vegetable selections from the list below. We include a
simple green salad with vinaigrette, fresh bread & butter.

Beautiful Taku River sockeye salmon filets are baked just so in this
creamy citrus sauce which highlights the flavour of the salmon. It
contains fresh orange and lime juice, cream, honey &
fresh tarragon. It is served with pilafed rice. Choose two vegetable
selections from the list below. We will include a green salad with
vinaigrette, rolls fresh bread & butter.

Roast turkey with apple pecan stuffing and beer braised ham with a
ginger chutney glaze. We serve this dinner with gravy, roasted garlic
mashed potatoes, roasted veggies, a yam gratin, green salad with
vinaigrette & fresh bread & butter.

Our premium dinner! This wonderfully flavoured wild meat is served with a wild cranberry, port and cream sauce which compliments it beautifully. It is best served with a garlic mashed potato. You may choose two vegetable dishes from the list below. We include a green salad with vinaigrette, fresh bread & butter.
Vegetable choices
Roasted Veggies
We will choose a selection of yams, cauliflower, fennel, turnip,
brussel sprouts, carrots, beets, parsnips, broccoli, green beans,
squash, mushrooms, onions. They are tossed in spices and flavourings
and slow-roasted in the oven until just tender.
Yam Gratin
Yams seasoned and baked in cream and finished with gruyere cheese or buttered crumbs. A wonderful savoury pudding.
Tomatoes cooked beneath caramelized onions
Fresh tomatoes slow-cooked beneath sweet caramelized onions. Flavourful & moist. These are delicious.
Roasted Beets in Herbed Vinaigrette
The simple beet is transformed when it is roasted and its sweetness is nicely offset by a light, herbed vinaigrette.
Braised Leeks
The leeks are first browned in olive oil then cooked until perfectly tender in chicken stock. Absolutely yummy.
Roasted Carrots
These can be finished with a spiced oil or with an orange ginger sauce.
Roasted Cauliflower & Red Pepper
Roasting sweetens the flavour of the cauliflower and combined with the red pepper, this is a really winning dish.
Starch Dish Choices
Smashed Potatoes
Flavour them with roasted garlic or horseradish or leave them as they are - creamy and wonderful.
Pilafed Rice
Ours is simple. Rice cooked with herbs and a few vegetables for both colour and flavour, this is a great accompaniment to chicken or fish.
Middle Eastern Cous Cous
Lightly scented with the sweeter curry spices (cinnamon, cardamom) this is very nice with lamb.
Wild Mushroom Risotto
- ABSOLUTELY AMAZING! (2006 clients) – add $5/person if you choose this as your starch dish.
